Greek Style Yogurt



Servings:                   4
Yield:                         2 Cups

Preparation Time:   2 days
Cooking Time:         0
Start to finish:          2 days

Ingredients
28 Ounces Plain Yogurt

Instructions
1.     Place a colander on a large mixing bowl.
2.     Line the colander with two layers of paper towels.
3.     Dump the Yogurt onto the paper towels.  Cover with another paper towel.
4.     Place the bowl with colander into the refrigerator.
5.     Remove bowl and pour out strained whey, returning colander to the bowl and replacing to the refrigerator.
6.     Repeat until whey stops draining from yogurt.

-----Notes-----
Use yogurt which is not based on gelatin.  Just a nice plain, unflavored, natural Yogurt is what you want to start with.

Variations
 If you find the result too solid for what you will use it for, just drain for one day.

Service
For breakfast, mix with any type of jam or jelly.
Use as a base for making Greek Tzaziki.
Use in place of regular Yogurt in any recipe.
